Special Cuvee means non-vintage, but in 1911 William Folks thought this designation an insult. The blend is classic, pinot noir, chardonnay and pinot meunier combining to create delicate bubbles and a slightly toasted flavor. Spiced apple or baked pear rounds out the flavor profile of 007’s preferred bubbly. This champagne is full-bodied, well worth the $40.00 price tag. I would drink it with fried chicken, or down it with a bucket of kumamoto oysters anytime.
